You can see from the suggestions given above for preparing chicken dishes, how easy it is to make lots of different menus without having to remember a separate recipe for each one.

The same thing works just as well for fish fillets, such as red snapper or sole.

Coat the fillets with seasoned flour, fry for only a few moments, depending upon the thickness of the fish. Remove. Fry the onions, garlic or vegetables, and make a sauce.

It's as simple as that. But for the fish preparations—instead of using chicken broth, or bouillon for the sauce—use white wine, water, bottled clam juice, or cream.

Mexican Style fish is particularly good with red snapper. And you might add an extra tomato, or a bit of tomato sauce.

German Style uses the same breading method. But don't pound the fish, since it's already tender enough.

American Style is particularly good, but bake for only 15 minutes or so, depending on how thick the fillets are.
