Indian Style
Same type of chicken breasts. Season the flour with salt, pepper, and a 1/2 tsp. curry powder.
Fry chicken in hot oil until done, and set aside.
In the same pan, fry a chopped onion, along with a chopped clove of garlic.
Sprinkle on another 1/2 tsp. of curry powder. Splash in about 1/2 cup fruit juice, any kind you have around.
Add 1/4 cup currants, or raisins, and a chicken bouillon cube, or powder. Let cook on low heat for a few minutes, adding more juice if it gets dry.
Add chicken, and heat in the sauce.
Serve over rice with various garnishes, such as: sliced toasted almonds, shredded coconut, chopped cucumber, and chutney.
